Olive oil fustis are an innovative method for storing and serving olive oil. Because they are made of stainless steel, they have benefits and have become the main tool for keeping olive oil fresh and tasty.
You’ve probably seen fustis in stores or restaurants but are not familiar with the term. Keep reading to learn exactly what is an olive oil fusti and which types are best.
What Is an Olive Oil Fusti?
A fusti is a stainless steel tank container used to hold and dispense liquids. An olive oil fusti is specifically designed to store and dispense olive oil. Olive oil fustis are manufactured in Italy.
Olive oil fustis keep the oil fresh and maintain the natural flavor of the oil because they protect the oil from light, heat, and air.
In addition, they allow for smooth and easy dispensary and no mess! They are commonly used in restaurants and olive oil stores but you can find them in the homes of many Italians, too.
Fustis are made through two processes. The folded metal process is similar to that of tin cans. Two pieces of stainless steel are rolled together and connected through pressure.
Folded fustis are cheaper to manufacture and cheaper to buy. However, the folds inside the tank can trap food particles making them more difficult to clean.
The other process results in a seamless tank. Seamless tanks use Tungsten Inert Gas (TIG) welding. TIG welding consists of joining two pieces of stainless steam under an inert gas while heating.
Seamless tanks have completely smooth interior and exterior surfaces to prevent trapping and bacterial contamination.
How to Clean an Olive Oil Fusti?
When cleaning an olive oil fusti, you should only use quaternary ammonia. Never use chlorine because it will react with the chromium oxide layer of steel (this is what makes it stainless) and cause rusting. You should also avoid vinegar or vinegar-based cleaners as vinegar can alter the quality and flavor of the oil.
Clean the olive oil fusti every time you change the type of oil you are storing or once a month– whichever comes first. After cleaning, make sure the fusti is completely dry before adding olive oil. Mixing oil with water can change the taste and color of the oil and cause thickening or gelling.
It is also important to thoroughly clean the stainless steel spigot. After removing the spigot, use a wire brush to clean inside the spigot and at the area of attachment.
To clean the outside of the fusti, you can use olive oil! Place a small amount of oil on a gentle cloth and scrub the exterior in small circular motions. If there is excess oil, use a paper towel to absorb the excess.
