How to Clean an Olive Oil Fusti?
When cleaning an olive oil fusti, you should only use quaternary ammonia. Never use chlorine because it will react with the chromium oxide layer of steel (this is what makes it stainless) and cause rusting. You should also avoid vinegar or vinegar-based cleaners as vinegar can alter the quality and flavor of the oil.
Clean the olive oil fusti every time you change the type of oil you are storing or once a month– whichever comes first. After cleaning, make sure the fusti is completely dry before adding olive oil. Mixing oil with water can change the taste and color of the oil and cause thickening or gelling.
It is also important to thoroughly clean the stainless steel spigot. After removing the spigot, use a wire brush to clean inside the spigot and at the area of attachment.
To clean the outside of the fusti, you can use olive oil! Place a small amount of oil on a gentle cloth and scrub the exterior in small circular motions. If there is excess oil, use a paper towel to absorb the excess.
